Tomato Choka   by Haydn Dunn



Choka is an appetizer in Trinidad and Tobago It's made with fresh tomatoes, onion, garlic,and peppers. It goes great with "Sada Roti" bread and even potato chips

And this is how you make it

Ingredients

8 to 10 plum tomatoes, washed
Salt, to taste
4 cloves garlic
1/2 jalapeno or Scotch bonnet pepper
2 sprigs cilantro/culantro
1/3 cup corn oil
1 small sliced onion

 

and for those who like it a little more spicy

1 congo pepper

 

Directions

Insert skewers in tomatoes and lay on open flame or cut in half.

Lay cut side down on baking sheet and broil.

Char until skin is blackened and peeling.

 Remove from flame and rest on plate.

 Peel off charred skin. Using a rolling pin or "bilnah" mash tomatoes, and add salt. In a mortar smash garlic, peppers and cilantro.

 

Mix with pureed tomatoes.

 Heat some of the oil in a saucepan and caramelize onion.

 Add heated oil caramelized onion mixture to tomatoes.

 

And there You have it, Scrumptious Tomato Choka with some Sada Roti.. A Healthy Choice !!!
